Irish Flag Stir Fry

This is the easiest and laziest yummy meal for a week day evening. It uses cheap ingredients and is so easy to make! The only reason I have named it Irish Flag stir fry is that whilst delving into the bowl I noticed the colours of the dish bared some resemblance to the Irish flag – so it’s not a comment on the origin or taste 🙂

  • Instant ramen noodles (I get mine for 18p from Aldi – I used Curry flavour)

    Irish Flag Stir Fry

  • 1 yellow pepper
  • 1 carrot
  • 1 red onion
  • 1 teaspoon of chilli flakes
  • A handful of spinach
  • Black pepper
  1. Chop your carrots, onions and pepper in long batons
  2.  Heat your wok and once hot, add some vegetable oil and gently fry your veg
  3. Whilst the veg is frying, put your noodles on to boil
  4. Once the veg has softened add the chilli flakes and place a lid on the wok and turn the heat down low
  5. Once the water has nearly all boiled away from the noodles take them off the heat and add the noodle seasoning
  6. Take the wok off the heat and add the noodles
  7. The left over water in the noodles laps up all the yummy flavours from frying the veg and creates a nice sauce for the stir fry
  8. Finally add a handful of spinach and place the lid back on your wok for a few minutes to let the leaves wilt a little
  9. Add a sprinkle of black pepper and enjoy!
