Squidgy Chocolate Brownies

If you’re after a chocolate fix – (which I would love at the moment but I’ve given up chocolate for lent so putting this recipe online is the best chocolate fix I can get at the moment!) then this is the pudding for you. I recently made 250 miniature brownies for my nephews christening and the reason I didn’t have a melt down is they are so easy to make and only take about 20-25 minutes to bake. Enjoy!

  • 400g caster sugar
  • 225g melted butter
  • 60g coco powder
  • 1 teaspoon of vanilla extract (not essence – not as good)
  • 4 eggs
  • 225g plain flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Squidgy Chocolate Brownies

  1. Mix ingredients in the order given
  2. Bake at 180C/gas mark 4 for 20-25 minutes in a rectangular greased tin (If your taking to a party I used disposable foil trays as there’s no washing up at the end!)
  3. Cool, slice and enjoy!
