This is another of my favourite cooks recipes – the lovely John Whaites!

For the cake:

  • 220ml sunflower oil
  • 225g caster sugar
  • 4 eggs
  • 225g self raising flour
  • 1 tsp baking powder
  • 150g juicy raisins
  • 200g finely grated carrot (squeezed to remove moisture)
  • 150g chopped mixed nuts
  • 2tsp mixed spice
  • Zest of 1 large orange
  • Zest of 1 lemon

For the frosting:

  • 80g salted butter at room temp
  •  450g icing sugar
  • 400g full fat cream cheese
  • Zest of 2 oranges
  • Walnut halves or pieces to decorate
  • Ground cinnamon to finish
  1. Preheat the oven to 160C or gas 3
  2. Put all of the cake ingredients into a bowl and mix to a batter with s wooden spoon
  3. Divide between two cake tins and bake for 30-40 minutes until golden brown or a skewer comes out clean
  4. Allow the cakes to cool and if you’re brave and want a four tiered cake this is where you can slice the two cakes in two
  5. Mix the frosting ingredients together in a bowl and mix with an electric whisk until smooth
  6. Sandwich the layers together with frosting and decorate with walnuts and cinnamon to finish!
