These eggs are absolutely gorgeous for a weekend treat and so easy to make. You will need:

Eggs

Tortillas

Red Onion

Chopped tomatoes

Chilli flakes

Chives

 

  1. Roll the tortillas (1 per person) into a cigar like shape and snip with scissors into a frying pan with a little oil to fry until golden brown. Remove once coloured.
  2. Fry the onion in olive oil and add the chilli flakes and chopped tomatoes (I use tinned)
  3. Throw in the crispy tortilla bits and add the eggs (beaten already) into the pan and take off the heat still stirring until you have the consistency you want.
  4. Add some chopped chives and seasoning and enjoy!
