Mexican Scrambled Eggs (Nigella Recipe)
These eggs are absolutely gorgeous for a weekend treat and so easy to make. You will need:
- Roll the tortillas (1 per person) into a cigar like shape and snip with scissors into a frying pan with a little oil to fry until golden brown. Remove once coloured.
- Fry the onion in olive oil and add the chilli flakes and chopped tomatoes (I use tinned)
- Throw in the crispy tortilla bits and add the eggs (beaten already) into the pan and take off the heat still stirring until you have the consistency you want.
- Add some chopped chives and seasoning and enjoy!
